Banana Chocolate Snack Cake


This is a super, super easy treat to whip up when you have some overripe bananas in need of a home. I had 2 on my counter that either needed to go in the freezer bag, or get baked into something delicious and this recipe popped into my head. Just 3 quick and easy ingredients, a quick blend, and into the oven! This came out fudgy, moist, and absolutely delicious. I wanted to eat it for breakfast this morning (it's got bananas - that counts for breakfast food, right?!) It is chocolaty, but not overly so, with just a hint of that banana scent and flavor. The little chocolate chips dispersed throughout give you nice bites of rich flavor and a little texture. This is great "finger food" snack cake - and is perfect to cut into squares and wrap or pack for lunches, or grab with a glass of milk as an after school snack.

For the cake mix, I used a Kroger brand box of Devil's Food cake mix and it worked very nicely. I'm pretty sure any chocolate flavored mix will work nicely. I love that this has no oil or butter in it, you get all that tender moistness from the bananas! I probably used about 4 1/2 medium sized bananas - I used the 2 really ripe ones from my counter and pulled out some "chunks" from my freezer bag so it probably averaged out to a little more than 4, but it made it easier for me to blend the cake mix in since I had a little more moisture to work with.

My son said these were very "brownie like" and that's probably a good way to describe them - they are very fudgy like brownies, but not quite as dense.

Banana Chocolate Snack Cake from Lisa's Dinnertime Dish

Ingredients
1 box chocolate cake mix
2 - 2 1/2 cups very ripe bananas, well mashed (about 4 medium size bananas)
1 cup semi-sweet chocolate chips 
 
 
Directions
  1. Preheat oven to 350 degrees.
  2. This works well with a stand mixer - blend the bananas very thoroughly until smooth, and then on a lower speed add in the box of cake mix and blend just until mostly combined. Turn off mixer and remove bowl. (Batter will be pretty thick.)
  3. Add in chocolate chips and finish combining ingredients by hand with a spatula or wooden spoon.
  4. Spray a 9x13 baking dish with cooking spray, and spread cake mix into pan, using a spatula to smooth it out as much as possible.
  5. Bake for 25 - 30 minutes, or until set in the middle.
  6. Allow to cool, slice, serve and enjoy!
