Super Easy Breakfast Casserole!

This has been a "go-to" of mine probably for a couple years now. It's so easy to throw together, cook in the morning and the leftovers heat up really well too! My son loves this and enjoys having the leftovers to eat a hot breakfast even on a rushed weekday morning. :)

I originally discovered this recipe on BabyFit's website here. I tweaked it to use what I had on hand and to make it to our personal preferences (I was also using a smaller dish so initially halved the recipe). I use a 5-quart dish.

Ingredients:
1 lb ground sausage, cooked and grease drained, or about 1/2 a package of bacon, cooked and grease drained, and cut slices into 3-4 pieces each.
6 slices bread, diced into cubes
1 - 1/2 cups shredded cheddar cheese
1/2 tsp mustard powder
1/2 tsp salt
1/4 tsp pepper
5 large whole eggs
1 - 1 1/2 cups milk

Directions
In a medium bowl, whisk together eggs, milk, salt, pepper and mustard powder. Add bread cubes, meat, and cheese to casserole dish and pour egg mixture over top. Stir gently to combine.

Cover and refrigerate overnight. Place on the counter 30 minutes prior to baking. Pre-heat oven to 325 degrees.

Bake casserole, covered, for 45 minutes or until eggs are fully set. Cool 5-10 minutes, serve and enjoy!
It's not the prettiest thing to take a picture of, but it's hearty and filling especially on these cool fall mornings and couldn't be any easier on a busy day! :)

  2. I have been having a "return to simple" dishes lately I think. Lots of easy, homemade goodies that are comforting and satisfying. This one definitely qualifies! :D
