Warm and Cozy Baked Oatmeal

I cannot believe I've let a month pass by without a post! Time has literally been flying. I cannot wrap my head around how much faster time seems to go by when I'm in school, especially with Kenneth home now. It's all I can do to keep up with studying, homework, classes, and being a mom and a wife in between!

This is a great, easy, and so delicious breakfast! We just got back home yesterday afternoon from spending Thanksgiving with Kenneth's parents in the mountains and it was fabulous! We're all a little wiped out and ready for a quiet day (filled with homework and studying, but at least a little a quiet!) and this looked like a great, quicky, and hearty breakfast to start our day with.

Kenneth really liked this one, it really is like starting your day with a big soft oatmeal cookie. If you bake it for 30 minutes, there will most likely be some that's still a little soft/runny in the middle but it's really good that way too, just depends on what texture you're looking for. If you want it completely dry in the middle, test with a toothpick and bake a little longer if necessary.

Town Hill Baked Oatmeal by  on Tasty Kitchen

Ingredients
  • 3 cups oatmeal
  • ¾ cups brown sugar
  • ½ cups butter (melted)
  • 2 whole eggs
  • 1 teaspoon vanilla
  • 2 cups milk
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
Instructions
Preheat oven to 350 degrees.
Lightly grease a medium square casserole dish.
Combine all ingredients in a large mixing bowl, mix well until completely combined.
Pour into baking dish.
Bake uncovered at 350 degrees for 30-45 minutes, or until it's set in the middle.
Serve warm.
