Mediterranean Artichoke Dip


This was such a delicious baked dip recipe we whipped up recently for our Hallmark viewing party. It is rich, cheesy, and chock full of delicious Mediterranean flavored ingredients. There is a nice tang from the artichokes and kalamata olives, and a wonderful creaminess from the addition of the hummus.

We had about half of the dip leftover - and we made the BEST pizza with the remnants of this dip, some extra hummus, kalamata olives, chopped grape tomatoes, and pimientos along with a sprinkle of provolone and mozzarella over the top. It would make such a great baked flatbread topper too! Getting creative with leftovers is my calling in life I think.


We halved the original recipe since we were making so many different recipes and weren't serving a large group; we also had to sub Mozzarella for the called for Monterrey Jack cheese. I think most mild white cheeses will work well for this dip!

Mediterranean Artichoke Dip adapted from Ree Drummond

Ingredients
1 14-oz can artichoke hearts, drained and roughly chopped
1/2 cup mayonnaise
1/4 cup hummus (we used pine nut flavored hummus)
1/4 cup crumbled feta cheese
1/2 cup pitted and diced kalamata olives
2 TBS pimientos
2 TBS sour cream
1/2 TBS dried parsley
1 TBS minced garlic
1 cup shredded mozzarella cheese
1/4 cup plus 2 TBS grated Parmesan cheese
salt and pepper (to taste)
garlic powder, to taste

Topping:
1/2 cup mozzarella cheese
2 TBS grated Parmesan cheese

Directions

  1. Preheat oven to 350 degrees. Spray a pie plate with nonstick cooking spray.
  2. In a large bowl, combine all dip ingredients except salt, pepper, and garlic powder. Blend and taste test - add salt, pepper, and garlic powder to taste if desired. Smooth dip with a spatula.
  3. Sprinkle topping ingredients evenly over the top and bake in the pre-heated oven for 20 minutes, until bubbly, golden brown, and the cheese is melted.
  4. Serve with pita chips and veggies if desired.
